JOB DESCRIPTION AND DUTIES:
Reporting to the F&B Instructor / F&B Director, the Supervisor is responsible for ensuring the smooth running of the outlet, effectively managing his/her team, improving guests satisfaction, maintaining a safe and sanitary working environment and ensuring that only quality products are served.
The F&B Supervisor is required to facilitate SHBM students learning on the job by sharing his/her expertise and acting as a role model.
The scope of this mission includes:
Conduct service briefings and debriefings
Assign tasks and workstations
Acknowledge and welcome guests warmly.
Serve food and drinks to guestss in accordance with SHBM standards and procedures
Thank guests at the end of their experience and give a fond farewell
Take guests reservations
Assist guests table seating
Ensure that guests are served within the expected time.
Present the Menu and describe the dishes/cocktails and their ingredients
Interact with guests in accordance with the SHBM service sequences
Apply service techniques correctly at all times and serve with enthusiasm.
Set up tables according to the type of event
Tip all orders on the POS system before serving.
Communicate with the Chef regarding menu, waiting time and product availability.
Communicate to the Chef guests requests (allergies, diets and other special requests).
Check guests’ satisfaction after each dish or drink
Clear tables according to standards and ensure that clearing is done correctly at the stewarding zone.
Maintain cleanliness of work areas, dishes, glasses, etc. throughout the shift.
Present a correct and accurate final bill to the guest.
Ensure that the outlet is always clean and organized, both front and back office.
Work with SHBM students and F&B Instructors to ensure that the restaurant reaches its full potential.
Ensure that the opening and closing tasks of the outlet are carried out properly
Monitor and optimize F&B costs and revenues related to the outlet.
Ensure that the standards & procedures (SOPs) are systematically applied.
Carry out end of month inventories (OS&E/Linen/Goods).
Play an active role in the mentoring and development of SHBM students and new recruits.
Perform special functions organized by SHBM and UM6P.
Perform any other duties as assigned by the F&B Instructor or F&B Director.
QUALIFICATIONS AND APPLICATION REQUIREMENTS:
Higher degree in the Food & Beverage field
Great knowledge of food and beverage service
Good level of English and French proficiency
Thorough knowledge of hospitality operations
Minimum 8 years of professional experience
International experience (or international company experience) in the hospitality industry
Strong organizational skills
Capacity to demonstrate professionalism and act as an example for the students
Proven track record in a hospitality school or hotel of similar standard in similar capacity
Ability to adhere to SHBM & UM6P’s values
Positive attitude and an open-minded approach to cultural diversity.
